Kabab koobideh

Kabab koobideh or kubide is an Iranian minced meat kebab/kabab which is made from ground lamb or beef, often mixed with parsley and chopped onions.
Preparation
To prepare kabab koobideh, ground meat, onion, salt, pepper, and koobideh seasoning (sold at various Persian restaurants) are mixed. These ingredients should be mixed well together for 15 minutes until the mixture becomes smooth and sticky. Moisten your hands and press the mixture around a skewer. At both ends should be pressed firmly to the skewer. The kebabs should be 20 cm (7-8 in) long. [*]
Soltani
At Persian restaurants, typically the combination of one Kabab Barg & one Kabab Koobideh is called Soltani, or Kabab-e Makhsoos, meaning 'Special Kebab '
